Thanks you! @Dyal_SC I stole the recipe from my mom. She uses bone-in pork chops as you will get more flavor as the chop won't be as thick. Boneless chops are easier to butterfly when in a crunchDyal_SC said:Awesome idea!! Looks fantastic."The pig is an amazing animal. You feed a pig an apple and it makes bacon. I went 350 degrees direct dome temp. I just watched the chops until the internal temp hit 145 degrees. I'd say around 10-15 minutes"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

Did you attempt to flip them? I will have to make a mustard glaze, and our butcher wasn't in so they aren't as thick as we usually get them, bone in as well. I'll let you know, thanks for the great post!Dyal_SC said:Awesome idea!! Looks fantastic.County of Parkland, Alberta, Canada -
@AlbertaEgger You can flip them without any issues. Just make sure you have a couple toothpicks in each to keep them together.AlbertaEgger said:

Bone in is actually my preferred way. You get the most flavor with the smaller bone in pork chop. I usually just get boneless as I'm lazy and don't take the time to carefully butterfly them. If I had more patience I'd do bone in without a doubt. Your in for a treat!"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

Thanks! @SoCalTim I hope you liked them. I'd go bone-in like AlbertaEgger for the first go around. You get the most flavor that way.SoCalTim said:My ultimate compliment - BOOKMARKED!"The pig is an amazing animal. You feed a pig an apple and it makes bacon.
