Stuffed pork loin

Tonight I stuffed my first pork loin. Stuffed with caramelized onions, sauteed spinach, cream cheese,roasted red peppers served with sundried tomato puree, summer squash and grilled polenta.

    @Legume it was good. I'm not real sure I will do it again unless it's for guests. I'll probably just cook all the stuffing and put it on the top or side. First time on the polenta also. I not that crazy about it.

    Love polenta like that.  If you have any left, try with some mozz, basil and tomato sauce, grill it until melty.
