I get them at my local Wegmans towards the end of August. Either fresh or they'll roast them for you out front. Melissa's brand. I think a bushel was 30 or 40 bucks.

No that's pretty steep. Typical bushel raw will run $25-$30 or even less depending on where you're located.

I see them about once a year when they harvest. Dried I see in some stores like International Market. You should check out that store if you haven't already.

I bought a bag to try - how do I know when they are done roasting?

Skin needs to be maybe 70% or more blackened. I did buy commercially-roasted chiles that were speckled black, maybe less than 50%, that peeled easily but I've never been able to do that myself on a gas grill, egg, or kitchen burner. I think commercial chile roasters get MUCH hotter than most home methods, plus the chiles are constantly rotated.blasting said:I bought a bag to try - how do I know when they are done roasting?
