By the way- you convinced me to order some Unami bags. I'm a huge fan of dry aged steaks but haven't tried aging at home yet. Oldest I have eaten is 100 days- from a steakhouse in Chicago. I tend to lean towards the 45 day mark- oh and sorry for the hijack.Greensboro, NC
