Chuck, brisket and ribeye...
Sv at 140 and a quick sear... The guest requested mw. Even at 150 the burgers were juicy and still were pink. I showed them the thermapen reading so they could relax and enjoy.
Turn out pretty good.

Great burgers! My wife will only eat hers well done. She's taken to looking at the thermapen reading before I take it off the grill too. I have to stop looking at SV threads before I buy one and I don't have a wife to burn burgers for.1 large BGE, Spartanburg SC

@henapple I never realized you were a Gamecock. I'm a Georgia fan myself but went to Wofford and go to all those games now. The last time I was at Carolinas stadium was Lattimores first game against GA when he shredded us all game.1 large BGE, Spartanburg SC

You could take a burger infected with all common food pathogens, cook it via sous vide for 4 hours at 130F, sear, and feed it to someone with an immunodeficiency. They would enjoy the burger and not get sick from it.
