    We had about 20 or so for the pre-party and about 100 +/- for the pig.

    This is similar to adding wood chunks to lump in an egg. You light both ends of the charcoal and the two fires burn in toward the middle, hitting the splits (apple wood in this case) adding smoke.

    Awesome cooks! We were going to do a hog roast at our wedding reception, but we had so many people, we decided to do 8 fresh picnic hams instead. 
    I wish we would have had the opportunity to roast one, but hey, we have anniversaries coming up!
