This is similar to adding wood chunks to lump in an egg. You light both ends of the charcoal and the two fires burn in toward the middle, hitting the splits (apple wood in this case) adding smoke.QingEsq said:Tenderloin had me drooling. Awesome cooks! We were going to do a hog roast at our wedding reception, but we had so many people, we decided to do 8 fresh picnic hams instead.
