Filets, roasted asparagus with cherry tomatoes and warm bacon vinegarette

Tonight's dinner was a 10 out of 10. Reversed seared some bacon wrapped filets. Roasted a bundle of asparagus and made a warm bacon vinegarette with cherry tomatoes. Finished with a little 


couscous. Note--- bacon was my own as were the sungold cherry tomatoes I pulled from the garden this AM. Pics will do the rest.

@theyolksonyouThe recipe was actually called over roasted asparagus with grape tomatoes and warm vinaigrette. It is from Southern Farmers Market cookbook.
I halved the recipe down to this:
3 pieces of bacon diced and sautéed until just crispy. Toss in half a shallot minced and sauté until translucent. Drain all but 1 TBS of rendered bacon fat. Whisk in 1/8 cup apple cider vinegar, 1/6 cup of EVOO, 1TBS honey, 1 TBS Dijon salt and pep.
