Went out Friday to pick up some fresh seafood.
Just a little package for MaMa

Fresh Jumbo Shrimp marinaded in Kellie & Joe's Key West Style Cuban Marinade wrapped in thick cut bacon.


Getting the pit and CI temp stabilized at 500℉ or thereabouts.

Blackened Grouper with Watermelon Pico De Gallo. This was a first for me on the watermelon style and I totally winged the ingredients. The flavors melded quite nicely with the grouper.
Cubed seedless watermelon (1/2 melon), 2 chopped ripened GA peaches, 2 diced jalapenos, 4 chopped salad mini cucumbers, 1 fist full cilantro chopped, fresh lime juice and a punch of fresh ground S&P.

Brother husker, if time ever permits, soak some grouper fillets in whole milk for 8-12 hours. Coat with commercial Fish Fry. Then deep fry in peanut oil at 500 degrees. Careful not to over fry them though. At 500 degrees they are usually done around the 60 second mark give or take a little depending on their size. If you like grouper, the above is spectacular my friend. Again, great job on the grub brother.
