Hash? Definitely expect to hear from some SC boys...

I've been living outside SC for almost 20 yrs now, and one thing I've never been able to find anywhere is hash served over rice like I used to get with pulled pork at practically every BBQ joint we ever went to.   Honestly I don't even know what it was made out of, but assuming very finely shredded pork.   In any case, if any of you SC guys (or anyone else for that matter) has a good handle on how to make this, I'd love to hear from you.

    We used leftover corned beef or pastrami in the past. Any small diced pork or beef product would work. add diced potato, carrot, onion if you like and season. on to a cast iron pan hot, done. We love hash and eggs!! Hope that's helpful.

    Keep telling yourself that hash is made up of finely chopped pork if that helps it go down.  Otherwise, take the red pill and click on the link and see how far the rabbit hole goes.  Enjoy.

    Interesting. I wondered why I never heard too much about hash until I moved to Aiken, sc. And now I know I really don't want to try it.

    Wow, I've been making something I've called Hash for years and it definitely ain't what SC makes.  I guess mine is more like what some restaurants started serving as "skillets", but I've been making it long before "skillets" became the restaurant rage.

    Mine is basically hash brown potatos cooked with scrambled egg, some form of breakfast meat (bacon, sausage, spam, et al), grated cheese, & ketchup.  sometimes I do an O-brian variety with sauteed onions and mini bell peppers diced up.

    Using the Black Cast Iron grill, Plate Setter,
     and a BBQ Guru temp controller.

    Medium BGE in custom modified off-road nest.
    Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

    I am a SC native and hash is a major part of the gameplan when I go into a Q joint. I have always wanted to make it and know it probably has strange things in it but man it's good. I will see if I can't find a recipe

    Tiger man......first off (you and others) don't want to know what is in it.  Between now and the end of the month, I am focused on my daughters wedding. In July,  I will be glad to get you some,  freeze it and overnight you some. That is the best way to eat it.....some things are better left unknown! Have been eating it all my life and agree with Chubb, it's better than the Que. While my handle is NorthGa, I actually live in Columbia. Those of you outside of SC really don't have much of an idea what we are referencing.

    I have not.....but will put it on my list of to do's. I have trouble getting past the Palmetto Pig (which is operated by family linkage to Dukes in Orangeburg.) I'll get back to you on my assessment.

    That's a very generous offer man, thank you.    You're right about those outside of SC not really having a good idea of what it is.   I've tried explaining it to people for years without much success, and that was before I knew how it was made (thanks 4Runner).   Still though, they could make it with 100% pig anus for all I care if it's tastes that good :)

    wound need to see a pic of this hash. hash is ground corned beef, small cubed potatoes, and an onion and garlic fried in a castiron pan til crispy, flipped and fried til crispy again, runny egg dropped on top, ketchup, and served with a side of beans. beats are added on special occassions and its called red flannel hash =)
