...when it comes to access to quality meat. Was down in Buffalo the other day and I was blown away at the quality of meat readily available. And I'm not talking butcher shops - this was a grocery store (Wegmans). Picked up two racks of spares for $20. The racks were really meaty and very fresh. I did not change anything in my rib cook - simple 2.5/2/1 @250F that I've done a hundred times, but these were probably the best ribs I have ever done. I attribute it to the quality of meat. I'm really jealous of our friends to the south right now!

    Should have stopped at Costco and grabbed a brisket?  None to be found around here!

    Those are some good-looking ribs.  The cook gets a tremendous amount of credit as well.  But, yeah, we do have access to some great meat here in 'Merica.

    South of the border is Mexico, even to most Cunucks I think, South of 49th is 'Merica. St. Loius ribs are not that common in my grocery stores, and when you find them they are overtrimmed. Baby backs are around but usually not as meaty as US baby backs.

    Nice ribs. I will keep my healthcare and safe streets but still, nice ribs. :)

    Wegmans is fantastic, it is consistently rated the best grocery store in the country.

    We can and do. I buy pork ribs and beef brisket in the US as the cuts are better and you can actually find them. Beef, other pork cuts and poultry are just as good as in the US, IMO. We prefer Canadian poultry even though it is often quite expensive. Picked up a cryovac pork loin last week which was just under $2CDN ($1.59US) a pound.

    Your south of the border ribs look excellent.  Yeah, we take the quality of our meat for granted most of the time,

    Gotta admit that when I saw the thread title I thought Mexico.  Regardless, enjoy the cooks.  North of the border you all have Maple Leaf lump so that goes in your column.  :peace:

    Thanks for the comments on the ribs guys. I'm based up here in the great white north, so yes, south of the border means the States for us Canucks! To be clear, we've got great quality meat up here, but in my area, it's not common to find it at a regular grocery store. Not quite sure what Wegman's would be equivalent to up here (maybe Longo's or Bruno's, but those are few and far between in terms of locations). In any event, the selection and quality of cuts at Wegman's caught be off guard. Can't remember ever walking in to an "everyday" grocery store up here and finding brisket, short ribs, and tri-tip.

    @bweekes - Aunt lives in Ajax, while visiting a couple of years ago we went into Sobeys (Sobeys recently bought Safeway in western Canada). The beef rib cuts were excellent and the butcher actually knew what a tri-tip was. I was impressed for a grocery store.
