    Is the egg plant underneath the tomato in the plated pic?  Looks good, I really can't wait for the garden to start producing. 
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    The tomatoes kinda dwarf the eggplant but the eggplant is under there, I swear.

    Those look good.  I wish I could find some tomatoes that looked that good
    Thank you.  Those came from a roadside stand and the lady said they came from Alabama   Way too early for Ky mators

    I am in GA and it is a little early here too. I have some plants with tiny green balls but still a month from that size. Maybe south ga

    Another gem!  How thick did you cut the eggplant?  How long did you let them cook?  Temp?   This looks perfect for a light summer dinner.

    @SaltySam - The egg plant was cut about 3/8-1/2" thick. I sweated them with salt for about 30mins before going on the egg @400ish raised direct. I flipped at 10mins and again at another 10min mark. Once they were starting to get tender I added the tomatoes for maybe 2 mins per side then stacked and added feta & basil   Once I had pulled from the egg I added the Glaze.

    That looks delicious!! An interesting variation could be melting some fresh mozzarella, fontina, or goat cheese on the eggplant on the egg, maybe even get some browning.

    Even by itself with no meat, that's a mighty fine meal! Love the balsamic too, I bet it finished it perfectly.
