Spicy Spatchcock and a Different Twist on the Veggies

Partially deboned and split a sheeken then rubbed with 2tbls of coarse ground kosher salt and let it set in the fridge for 4 hrs. Then rubbed with a mix of cumin,red pepper,cayenne and paprika and some herbs. Cooked indirect starting at 350 and increasing to 450 over the duration of the cook.

Now ow for the twist on the veggies. While prepping the veggies I decided I would stir fry them. So out comes the wok because the large was already hot anticipating some form of of a veggie cook In goes the squash,zukes,onions and shrooms with 2 cloves of fine chopped garlic

Then the romaine with Pineapple Head went in

No we plate it up with a Parmesan dressing

I really like egged veggies but this mix was really good. Prolly gonna be my go to for a bit.
This Memorial Day was started off with a crust less spinach,onion and spinach quiche

As usual, the cook looks great. Veggies especially. But, I have to laugh at the chicken on the grill. Looks like two old folks sleeping back to back ...
