Quick wagyu steak

quick confession, I've never had wagyu beef.

another quick confession, I've never grilled top sirloin.

I stopped at Central Market on the way home, for those of you not in Texas, it's HEB's version of Whole Foods.  They had Wagyu top sirloin for $13/lb, so I picked up three of them.

Rubbed with some Chupacabra rub and cooked at 400, flipping every couple of minutes with the dome open while the temp climbed.

I pulled them at 127ish.  Really good flavor and texture, few pics but good eats.  Served with roasted corn with a jalapeño lime butter and some broccoli roasted in evoo, lemon juice and zest and S&P.

    @Legume, those look great, like all your cooks. Personally I'd pull them at 115-120 because I like medium moo.  Your steaks look true med rare.  Beautiful job!

    Damn that looks good man. I wish we had a central market close by. Nearest one is a hour away. If yall are ever looking for something fun and different to go do,think about going to one of their cooking classes. I went to one on thai food a few years ago. Had a blast.

    Perfect. How was the texture compared to regular beef? Nice wall to wall pink just like the article someone posted about being a flipper as opposed to going with if you're looking your not cooking.

    thanks all.  I thought it was a great deal at $13/lb, the butcher said top sirloin is the most underrated in his opinion.  I didn't want to drop $30-40/lb on wagyu ribeyes or something like that

    @DMW my wife just grates jalapeno and lime zest into softened butter using a microplane, pinch of salt and a little lime juice and use a small brush.  sometimes a bit of finely chopped cilantro  we ended up brushing some on part of the steak as well

    @texaswig I've seen the ads for those classes but they always seem to fill up quickly.  I think they have a thai one I would like to try sometime

    @stemc33 taste was good, the texture was almost creamy, really nice melt in your mouth kind of feel

    @johnmitchell that was the leftovers that I sliced for re-purposing today.  I honestly forgot to take pics after the one on the grill until I sliced the meat all up and had that beautiful pile.  I was busy watching GS Warriors
