New BGE owner intro

Hey All,

 Just wanted to make a quick intro as I have really enjoyed reading the forums over the last couple weeks. Was doing resarch on a new grill and everyone I talked to said I had to get a BGE. I am picking up a new (to me) Large BGE on Saturday with a ton of Eggcessories for a great price. So excited to get cooking! Definitely going to be doing some research on things to cook initially and look forward to trying master the basics/temp control. I LOVE to cook but have used mainly gas and Weber Charcoal grills. My main outdoor cooking toy is a Caja China pig roasting box...so much fun. Look forward to asking you all questions and posting pics once I get the BGE. Have been reading about how to transport in my truck and feel pretty good about it. This seems like a great group and I am so glad to be joining up!

    welcome..  temp control is THE THING  I think.  You might even break it in with a few no food lightups  just to practice the reading you've doneon the subject here...  just a thought

    Welcome.  If you have dealt with a Weber charcoal grill it won't take to long.  Just remember to catch the temp on the way up before it gets to the temp you want.  Enjoy the ride.

    lotta threads recently on best first optional accessories..  I hate to sound like a Brookstone catalog  but THE BEST instant (3 sec)  thermometer is the thermapen    -   great to check meat & chic & pork temps when you are cooking by temp.   it's great but a bit pricey.    

    In general though, go slow on the optionals till you learn a bit, then go look at ceramic grill store site & peruse the Adj. Rig  or the PSWoo.  Pure pron for the Egg set around here.    there are cheap ways to get your grid raised a bit...  Ace hdwe has firebricks to go between ur grid  & the firerring

    you will want some high temp gloves - welders gloves or I like the orca mitt on amazon

    Lump?  BGE brand is fine,  made by Royal Oak (Home depot has sales on RO  btw)   Ace hdwe sells Rockwood  at many stores.

    IPA - I am new as well.  Just got an XL delivered this week, firing up for test run tomorrow (no food, just fire) and then doing Ribs for 6 adults on Saturday.  I'm insane so rather than work with what I have, I spent hours on the ceramicgrillstore website reading about their products and ended up buying yesterday the Adjustable Rig/Woo2/Stone/Drip Pan combo.  It took all the strength I had to avoid spending on the DigiQ Guru device as well but that's in my future as I want to cook overnight and not worry about temp control while sleeping.  It took me a while to figure out but the ceramic store has excellent photos and explanations on how their devices work. 

    I liked the idea of the woo2 to lift up my grate to the felt line so I wasn't reaching into the grill to cook direct (or indirect) and I like the adjustable rig to give me vertical space and for cooking pizzas up high in the dome.  This place makes great stones as well for pizza and heat deflection.

    However, for the Large, I have been told the best stone is their 13 x 17" Oval stone so that you can cook brisket/rib racks without any charring.  The XL has a 17.5" round stone so I get same coverage but Oval better for Large for some people.

    Finally, this is all based on research with absolutely zero experience.  Its actually knowledge I've picked up from some amazing folks on this site.  Thus I wanted to share my rookie knowledge with you from 4 days of intense research and sleepless nights!

    Really, really great info guys - thanks so much! My egg comes with a nest, side tables, plate-setter, cast iron grates, half moon baking stone, cleaning tools, electronic lighter, charcoal and some other odds and ends.

    On my wish list (not sure what all of these are called yet):

    -Tier/rack so that I can have two levels of cooking surface
    -rack for roasts and to do ribs vertically 
    -pizza stone 
    -digital thermometer

    Welcome aboard and enjoy the journey.  What follows are a few paragraphs of information that may be of use:

    After-market toys- With the BGE there are three basic styles of cooking;  “direct”-where the cooking grid is on top of the fire ring; “raised direct”-where the grid is elevated at least to the gasket-line (this setup requires after-market stuff-easiest is to get another grid and then use three fire bricks (or three empty aluminum beer cans) and place them on the grid at the fire ring and then put the second grid on top. The third is “indirect” where there is a heat deflector (platesetter or some other type stone) between the burning lump and the cooking grid.  This is the setup for low&slow long duration cooks.  I would get comfortable playing around with the BGE before any major after-market investments.  Will save you $$ in the long run. 

    Some observations-make sure you calibrate your dome thermo-boil some water, then insert the thermo and check the temp.  If not around 210*F, then note the off-set and use the nut on the back to correct.  Then recheck.

    Temperature is a controlled by the volume of lump burning.  The volume is controlled by the air-flow thru the BGE.  In thru the bottom vent and out the top.  Make sure when you set it up that the fire box opening is aligned with the lower vent. 

    When adjusting the vent(s) to change temperature, the feedback loop can take some time.  Changes in air-flow are reflected in the dome thermo temp.  Don’t chase temperature; +/- 10-15*F is close enough.

    “Stable temperature” is a relative term.  Means you haven’t moved the vents and the temperature is steady for anywhere from 30-60 minutes.

    That's more than enough for now.

    Welcome! I'm new too and just got my egg on Monday. Saturday, I'm trying spatchcock chicken and burgers. I'm told make sure to take pics, or it didn't happen!

    Welcome - if my memory serves me correctly, you have just advanced about 1,000 years. The roasting box being the ancient ancestor of the clay kamado, you have now joined the up-to-date ceramic version. Enjoy.

  • I'm fairly new myself to egging as well, and my advice is to calibrate your thermometer as soon as you get all set up (boiling water calibration).  It took me a couple months of cooks to finally decide to see where my dome thermometer was at and it was 50 degrees off.  Ever since I properly calibrated it my food has turned out perfect every time.
