SRF Tenderloin - I've got a question.

I took advantage of the recent roast sale at SRF and picked up a Waygu whole tenderloin that came today. I want to steak it out as it's only for the wifey and I. Is there any issue with thawing the tenderloin, cutting steaks, vac seal, and freezing the steaks? I don't have much experience with frozen meat.

You need to check this, I wish I could answer your questions but I don't believe you can/should refreez things. SRF is to good to take any chances.Charlotte, Michigan XL BGE

On their FAQ they said once the meat is thawed they don't recommend refreezing.
Note I don't think there is any safety concern- it is just an issue of quality. To be honest I don't know if you could tell a difference.
I had that tenderloin in my cart, but I wussed out and ended up getting the double-R ranch choice/aged instead.

Can I refreeze products after they have been delivered?As long as a cut has not been completely defrosted it can be placed in the freezer without any potential harm to flavor. After a cut has been completely defrosted, we do not recommend re-freezing it. Defrosted products can be kept in the refrigerator and should be used in approximately 7 days in their original packaging. Do NOT refreeze ground beef.

I took advantage of the same deal...have 1 frozen and the other is in fridge now thawed. We are sucking it up and cooking the whole thing. I'm sure we will "suffer" through. In laws? Are you serious? I know I would just have steak every night for a week. Just cook it a different method each time. Good learning experience and you get to have STEAK every night.

You've probably refrozen beef hundreds of times and may not be aware of it. My local Safeway gets meat in frozen. They thaw and trim, put it in the case, I buy it, take it home, portion it out and freeze it again. From a safety perspective, I think you are good. From a texture and mouthfeel perspective, every time you burst some cells during the thaw freeze cycle you will effect the overall quality of the cut. Nice problem to have - "Damn, I have to eat a whole tenderloin this week!"Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

No in laws. Cut with a serated knife and freeze away. No safety issues. Quality is the only concern. But a re frozen srf tenderloin is better than any kroger tenderloin I guarantee.Fish, Hunt, Cook....anything else?

Let it thaw enough to cut, then portion it and freeze. Half the stuff you buy thawed at the grocery was already frozen, and you'll freeze it again, and you never know the difference.

True. But SRF ain't no grocery store and even at BOGO one is paying top $$. I've thawed and refrozen steaks and can't tell any difference. Even did it with my lobels prime.XL, Small, Mini & Mini Max Green Egg, Shirley Fab Trailer, 6 gal and 2.5 gal Cajun Fryers, BlueStar 60" Range, 48" Lonestar Grillz Santa Maria, Alto Shaam 1200s, Gozney Dome, Gateway 55g Drum

Maybe another way to look at it is that if you re-freeze after slightly thawing, or even if you allow it to thaw completely, it will still likely be better than reheated leftovers. (I know the leftovers would still be pretty darn good, too, just saying.)
