I don't post many cook pics as I'm in the pedestrian camp but the below packer (prime from Costco) was 10.1 lbs post-trim weight.  Cooked indirect at 250-280*F on the calibrated dome and it hit the promised land in 6 friggin hours.  FTC saved the day but I have never seen such a speed cook.  (And it was a little over done when extracted from a 4 hour FTC).  Still great.  Just thought I would add fuel to the "cow owns the cook" data-base. 
Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Looks good to me.  And you are right.  I've had a 13 pounder get done in 7 hours at 240

    Looks like a winner to me brother. I agree fully that the higher grades cook much faster. A few weeks back, I did a Waygu Gold that was done in under 5 hours. The shorter cook time is almost enough to justify the extra expense on its own. Again, great looking grub.

    That's a great looking brisket boss!  Beef in particular brisket can surprise on cook time that's for sure. Please post more cooks. You've got much game.
