@Doc_Eggerton completely agree. This Chef definitely had traditional Japanese methodology in his craft. A real pride in it. I can appreciate and respect that. @Jeremiah A good example and food for thought is seafood. Red Lobster they have decent food (at best & that's me being nice) and it's the same food and floor plan for the most part at each location just as you would expect a franchise to be. But, just around the corner there's a joint that has killer food just waiting to be discovered. That's where I wanna go. Some say the "hole-in-the-wall" bars are a little saltier.Jeremiah said:I guess I'm the only one that thinks sushi is frigging disgusting. Don't really like hole in the wall restaurants either.
