Temp drop

how come when I put some ribs on the dome temp drops?  Should I adjust the temp higher before I put them in? It dropped about 20-25 degrees

    Nope, the meat is a heat sink. Sit tight, it'll come back. 
  • How long should it take to come back up?  I'm trying turbo ribs so they are only cooking 1:40 minutes

    Opening the dome releases heat, and then the ribs themselves are cold.  There's no need to start higher with ribs, as they'll take awhile to cook anyway.  An extra 15-20 min for the temp to come back up to level isn't going to make a big difference.

    I noticed this when I did my second BGE cook yesterday with a spatchcock chicken. I just let it ride and it came up to right where I had it before I put the bird on.

    I noticed this when I did my second BGE cook yesterday with a spatchcock chicken. I just let it ride and it came up to right where I had it before I put the bird on.

    @beachsmoke - do not chase the temp, as dear old Dad always told me “Boy, you are chasing a fart in a windstorm” - nothing could be truer with egg temps.

    I've been doing TONS of reading here and I can see where one would be tempted to chase the temperature. I resisted mightily and was not let down.  :)

    I always let my ribs rest in the bottom of my belly.  I don't mind how long they decide to nap once I'm done scarfing.
