Misfire. Checked them, then went to go get a new tire...then I stopped at Hobby Lobby and Home Depot. Got back and temp was rock solid, but the ribs were over. Falling off the bone a lil too much. Should not have left it unattended as it's clear now that it cooks faster than what I expected. Not a loss though....had a great smoke profile and good flavor.NPHuskerFL said:How'd they turn out Caz?

Nice Vault!! I'm going to pull the trigger either on a Jambo or a Humphreys Gravity feed reverse flow sometime in the next 18 months. Trying to get a better idea of what I'll actually use and what I just think is freaking cool!!

There is a thick wall of metal and insulation seperating the two, including a heat shield in the firebox. It is reverse flow.

@lousubcap I was referring to the door structure and positive closure. The older commercial Southbend Steamers had that style of closure along with magnetic style made it nice.
