pot roast on egg with uncoverd dutch oven

did a 4.5 lb chuck roast rubbed it with cow lick from dizzy pig seared it at 650 for 3 min per side then put in dutch oven with beef stock some chicken stock covered with onions red potatoes and carrots and let it go low and slow for 4 hours it was delicious neighbors loved it. I set dome temp to 300 about 45 minutes per lb I honestly cant remember internal temp just till fork pull apart longer is better keep checking fluid every half hour or so keep it topped off I used beef and chicken stock some water. the gravy is awesome alsoLarge egg panhandle of florida -

Looks like the Travis Method for brisket, only no Shiner. Can almost smell that thing cooking. SWMBO's favourite all time meal, pot roast.
Just asking - every tried one covered, as in a traditional in the oven version? (No wood smoke flavour)Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad! -
I've never even SEEN a 4 1/2 lb chuck roast! 3 tops. But whatever size, that looks great!
I hate it when I go to the kitchen for food and all I find are ingredients!

yes done with lid on just as tender.
