Sunday Birthday Lollipops (Lamb!)

Per request of the Prince, who turned 17 earlier in the week. He originally asked for brisket (well trained, this one), but later wanted to know whether he egg might be good for lamb lollipops. I guess we'll find out.
With family coming over, had to spring for 3 frenched racks from BJ's. Trimmed the fat way back, slit the meat on the top and stuffed them with a paste of slivered garlic, lemon zest, rosemary, sea salt and pepper. Montreal, shallots and more Rosemary on the outside.
Shooting for 125, maybe 130 IT before a rest to keep it rare. Can't be bad, right?

It's worth noting that this stuff is really, really rich. Next time, I'll use much more lemon zest/juice in the paste to brighten up the flavors some. Also, I trimmed the fat way back, but definitely could have done even more (particularly bc I cooked it direct). Personally, I'm a fan of the meat under the bone, but it was too much for SWMBO (which was a bonus for me, the Prince and the Nephew, who cleaned the sticks pretty good).
Have about a 1/2 rack left -- more bones to gnaw tonight and maybe a pita/tzatziki combo for those eating bread in my carb-challenged house.It's a 302 thing . . . -
We love lamb chops and rack of lamb off the BGE and this looks awesome! !'m hungry!
