@hondabbq .. thanks for posting the link to the video .. I missed it last night. I still can't believe that just using salt & pepper makes the brisket so flavorful ... It perhaps is the high quality meat that he uses that makes it worthwhile to stand in the line for 6 hours to get some of the brisket nirvana :-)LBGE & MiniOrlando, FL

Watched it last night ... thought he came across well. He made cazzy's knife look great ... pieces of brisket were flying.
Kept thinking about what it took to bring a fully cooked brisket to the show at the right time/temp/flavor to share it with the crowd. Talk about pressure. Plus, one smoker, one table, one rather large end-grain cutting board ... an extra uncooked brisket was the easy part.

It's been a while since I watched live TV outside of a sports event, could not believe the number of commercials! He said he uses salt and pepper as a base, and that "you could add some garlic". There was another thread on here that revealed his ingredients are Lawry's seasoned salt, pepper, garlic powder, mustard, and pickle juice, but proportions were not stated. Usually the end cut and the burnt ends are given to people in line. I give them to guests staring at me like a dog while i'm slicing. Texas burnt ends happen, but they aren't dipped in sauce or sent back to the smoker in BBQ sauce. We also only dedicate one strip of the point to them.DoubleEgger said:He mentioned burnt ends. That was John Lewis of La Barbecue, not Aaron Franklin. You won't find any material from AF saying he uses anything other than S&P.
