Nothing special here. Just some quick grub on the mini to knock the rust off. A couple of flat irons, Chuck eyes, sausage and hotdogs. The flat irons were rubbed with salt, pepper, cayenne and a little more cayenne for good measure. Grilled them at 450 direct until a internal of 125 degrees. Location- Just "this side" of Biloxi, Ms.

Sorry, crappy pictures, but the steak was delicious! We ate everything... split in half, they were around 15 oz each. B made some delicious lentil soup which I turned into liquid lava with naga jolokia peppers. I sweated out at least three coke zeros after dinner. Good times.______________________________________________I love lamp..

There are several factors that can influence if they are tender. First and foremost, their Grade. These were not high quality flat irons. They were reduced for quick sale "select" grade. That said, if you notice that I cooked them pretty rare and sliced them real thin, this way they turn out very, very tender. The higher grade will turn out even more tender. The higher grade flat irons can be cooked to medium well and still be pretty tender. On a 1-10 tenderness scale, these were about a 8. Not bad for a reduced price "select". Again if you start with poor quality meat, the slicing it very thin really helps. I usually don't buy "crap" meat, but I could not pass on the flat irons.JohnnyTarheel said:Nice cook...
