Would you make pork burnt ends from a chunk of butt in progress?

I have a couple of butts on the egg now. I was thinking of pulling off a couple of chunks, cubing them up, and making some pork burnt ends. I am considering using the money muscles for this.
Do you think this would be detrimental to the butts? Obviously I will loose some bark in those areas. Do you think the missing money muscle meat would be noticeable in the final pulled pork? I think with the entire butt pulled and mixed together you wouldn't really notice.

How big of a chunk?

Full disclosure @SmokeyPitt, I've never made burnt ends, it just looked like you needed a quick shove off the cliff.

I waited a little too long to try this. The plan was to pull a chunk off at 180. Well, the butt was 180 in the deepest part, but the chunk I pulled off was mostly too done to cut. I ended up with some chunks and some "coarse pull". I cubed up what I could, added some more rub, and put it back on in a pan. We shall see.

I'd think you'd want to cut your cube section off more around the 150-160° mark. That's typically about slicing temp for me but I have never attempted this goal. Thanks @lousubcap! I used leftover burnt ends in the grits this morning. My wife made some cheese grits for breakfast and I decided I wanted some protein and spotted the leftover pork in the fridge. A little vinegar bbq sauce + hot sauce and these really hit the spot.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Lol...just to be clear the pork was served strait up originally. The grits were a lefover experiment.
