I do it all the time. It's great. I brine duck breasts and then smoke over apple until like 140 then hard sear. score the fat before the brine and you will be very happy. This is very much like a red meat dish so don't fear the duck!

Look for a duck breast and raspberry sauce recipe. SHMBO and I met working at a French restaurant and the Chef was from France. Go figure. He made duck breast (sliced) with a raspberry sauce that was tremendous. We haven't had duck since but we would eat his again.New Albany, Ohio

Do it inverted, indirect on a chicken stand....trust me on this. Score the breast skin, just the skin, not the flesh in a diagonal pattern and cut the inside of both leg joints

Yes, definitely score the skin and collect/save the fat for frying potatoes.
One glaze I'm really fond of: 1/2 honey, 1/2 orange marmalade, warm on the stove to thin it out, then brush on the duck the last 1/2 hour of cooking."Dumplings are just noodles that have already eaten" - Jon Kung

Wrap the duck in bacon. Season and cook as desired. When finished, unwrap the bacon. Throw the duck to your dogs and eat the bacon. Enjoy!

I did a Ballotine duck once, came out pretty good except I wasn't thrilled with my stuffing. It's a lot of work, but the presentation is impressive for guests.
