Spares on the Mini Max

Second cook for me on the lil' dude.  My last cook (way back in July of 2014) on my large featured a set of spares.  Man I missed these!

So I had to try them on the Mini Max.  I picked up two racks of spares from a local meat market (Keller's) here in ABQ.  These spares were pretty big - not really trimmed at all.  I had to cut them into thirds (roughly) and layer them at first to get things started:

These were coated with that AlbuKirby rub I picked up - stuff is pretty good.  After about an hour at 225, I used some wooden skewers to string them together and stand them up, a-la @cazzy's technique on his small. Man what a pain in the ass that is!  I'm pretty sure I scared the neighbors here with all the cursing.  

Anyway, I foiled an hour later with some sauce and kicked up the temp a bit to 250 (dome) for two more hours.  Unfortunately they got a little burned.   Here are some of the ones that weren't as charred after they came out of the foil and had a bit of sauce:

There was a lot more pullback on the set that was burned a bit - just didn't get a chance to take a pic.  By the way, the sauce I used is this stuff:

Never heard of it before, but the stuff is GOOD!  I'd be more explicit about how good it is but I don't want to hurt anybody's feelings with all the f-bombs.  By the way, censoring posts is un-American, you jerkwads.

I was pretty bummed when I saw that I'd burned some of them a bit much, but man these came out pretty awesome.  Wife thought they were the best I've made.  Obligatory @cazzy wannabe shot:

    You had already go too far with the whole skewer thing so I didn't want to tell you at that time. With only two racks...skewers aren't really needed. I just lean them over each other to get em done. Lol

    Evisioning you messing with them is kinda hilarious.

    Sure, except that you halved yours and they were those Costco spares that are a good bit smaller.  Trust me, I tried leaning these bad boys on their own - wasn't going to happen.  They just weren't cooking evenly at all.

    Either way...they looking flipping great man. Looked like a success to me! However, your wife was prolly just being nice since that was the first rib she's had in 6 months.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    @JohnInCarolina ... great cook, but man you made me laugh.  I cooked one rack on a large the same day as your cook ... cut the rack in half, positioned it carefully so the pieces weren't touching, and all ends were over the drip pan or plate setter.  You cook two racks on a MM and the spread looks like a pileup on the expressway. But, damn the finished product looks great.

    Okay, series now.  How do you get them to cook evenly?  Constantly rotating? I know smoke is involved, just hope mirrors aren't.

    They look great.  Just a thought- you might consider cutting them St Louis style to make it a little easier to fit and arrange them.   Looking at the 2nd pic it seems you could have fit the trimmings inside of your rib teepee. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    That was how they were for the first hour so they could stiffen up a bit.  After that, they were skewered:

    Let's see ... hmmm. How about naming it after Grampa Goldberg - "Rube's Rib Rack" - no, the method isn't complicated enough.  How about giving it a southern twist - "Redneck Rib Rack"  - no, might be looked upon in a negative light.  Okay, how about - "MacGyver's Meat Master" - no, someone will head to the gutter with that name.  Got it ... perfect label to file it under - "Cazzy's Crazy Crutch" ... that's it ... done!

    I did not realize how competitive eggers are. Seriously, 1st it was how long and low could you go, then how hot and fast, and now who can do a whole hog on a MM.

    As an aside, or actually on topic ... those ribs look great JIC!
