TriTip on sale. $4.99/lb. Thought I'd try low and slow with reverse sear.
Rubbed a little 2 pounder up with DP Raising the Steaks and olive oil...
On the Mini, raised direct, 225ish, creeping up to 270ish for an hour or so until it hit 115 in the middle...
Took it off and tented in foil while I got the mini up to 400ish, then seared until 135ish in the middle...
With some boiled red potatoes and mushrooms with caramelized onions. Fantastic.
