    I'm in, last time I did this it only took about 30 minutes lol. Going for 15 min this time.

    I think it would be quicker if the video were easier to follow.  Someone should shoot it from the cook's point of view.  Anyone have one of those gopro cameras?

    ok, I've never done a ballotine, I've never cut my thumb off either, so we'll see how many 'firsts' I have with this throw down.  I don't want to sit on the sidelines, so I'm going to try to force my inspiration on this one.

    can anyone give me an idea (ballpark) of what the volume capacity of an average whole ballotine chicken is so I can figure out what the hell to stuff in it besides my thumb?

    Looking at the Peppin vid I would guesstimate about 2 cups worth of stuffing.

    I'll pass on this opportunity.
    I've ballotined a duck and 2 Cornish game hens and I've come to the conclusion, I don't like the amount of work the prep involves vs. the payoff.
    I may still try to ballotine a turkey next Thanksgiving, but I'm leaning towards "not" and doing a spatchcock and making dressing in the oven instead of stuffing a bird.  In fact the more I think about it, it will be the spatchcock.  I'll buy some extra turkey wings and lay them on the dressing like someone else on here did this year.

    But, hey, y'all have fun carving up them carcasses.

    Using the Black Cast Iron grill, Plate Setter,
     and a BBQ Guru temp controller.

    Medium BGE in custom modified off-road nest.
    Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

    I spent close to 30 minutes each for 2 Cornish Game hens.
    I ran into tendons and all kinds of obstructions I never saw in the video.
