MARINATING FROZEN WANGS

Any of my BGE brothers have a real good wing marinade for frozen wings?  My brother marinates his frozen wings in coke then adds a rub before smoking 30-20-10.  Sauce last 10 mins.  Anyone ever marinate frozen wings in coke?

  • I have never used coke but have used a simple brine of salt, sugar, soy and water. It worked out well.

    Why note they are frozen?   They'e going to have to thaw otherwise you're just applying stuff to the surface.  If you drop an ice cube into marinade, it's going to stay pure ice - nothing is going to permeate the ice, at least not very fast.

    In my opinion, marinades are surface treatments.  They do, however, brine the meat.  Both add flavor.

    I've cooked butts in the oven low and slow with Coke. Pre-Egg.

    No problem.  You can thaw the wangs in the marinade.  I do that all the time.  My favorite technique to marinade is put the food and marinade in a zip-loc freezer bag.  Get out all the air and you can put that in a water bath (sink or some vessel with tepid water) if the food is frozen, it will thaw out quick.

    Based on a recommendation here, my favorite wing marinade is Allegro Hot and Spicy.

    Depending on the marinade and for those of without a VacMaster, you can add frozen marinade to a FoodSaver bag, dump in the wings, either frozen or fresh, and vac pack them. Bring em out of the freezer to thaw in the fridge for a couple of days and you are good to go. 

    Wings, like @Cazzy, freeze very well in their marinade and the thaw in the marinade seems to intensify the flavour.
