Pork Tenderloin on the Mini

Finally home after visiting Family and traveling to Mexico over the Holidays. Found a pork tenderloin in the freezer, so whipped up a quick brine to help it thaw, and threw it on the Mini, raised direct..

Did kind of a reverse sear. Started at 270ish, and cranked it up when the internal temp was 130ish...

Like butta'  served with a batch of Hoppin' John, 'cause I need all the luck and prosperity I can get in the coming year...
