Anaheim peppers, cleaned and deseeded cutting down one side almost to the point but not quite, the stuffing is hot pork sausage ( I use Italian) mixed with Pepper Jack cheese. Stuff the peppers and then wrap with bacon, tucking the end into the cut in the pepper to get it started. Then coat in the rub of your choice (Bad Byrons in this case)... Egg indirect at about 350 until the bacon is crispy, then coat in bbq sauce of your choice (Sweet Baby Ray's Cola Q for these) and let them go a little bit longer to set the sauce.

Well it's pouring here... I think the biggest challenge today is gonna be getting the egg set up to go. Hope it slows down for a few mins.
Everything for the egg is prepped and ready... The scallops are dusted with Swamp Venom and will be seared on a little CI enameled pan. Filets will be done down low on the CI grate sitting on the coals.
