The infamous stall...

OK, this is a side discussion from my current one where I am doing a large amount of pulled pork.

Wow what a stall I have going.  On the  XL are four butts, and after over nine hours are at 189 internal.  Stalled for a couple of hours in the 160's.

On the LBGE are two butts that went on at the same time.  After over nine hours they actually just lost a degree to be at 81.  Makes me worry that the probe is not working right, although dropping a degree sort of argues against that.

When the XL is ready I am going to open the LBGE and use the Thermapen to verify the reading.

Man, a long night ahead.

  • 230=250, a little spiking higher.  I am going to verify it with the Thermapen when the XL indicates done.  Longest I ever had to leave PP in prior to this was 14 hours.

    I'd agree with this, otherwise if it's been 9 hours and is still only at 81, I'd be thinking about tossing that.

    LOL, I don't think I would admit this if it weren't for your melted bucket.  I believe that protects me from the oh **** award for at least 24 hours.  I could not stand it any longer and went and Thermapened it.  You know what?  The remote thermometer is much more accurate if you actually insert the probe in the meat.  Internal is currently 181 (now) on the LBGE and 189 on the XL, so they are coming along right together.
