Friday Night Butts for Monday's Lunch

Taking advantage of the evening and going to do 3 butts over night for my team's holiday lunch. The guys have worked their collective asses off this year; it's the least I can do; plus, several of them have seen my posted cooks and have been asking

Doing the bbq pork, coleslaw, rolls, and a big tray of holiday cookies.
Going with Bad Byron's for the rub, and hickory & orange for smoke...

I took a big pot of brisket chili to my main client's office yesterday. Very well received. Gave my contacts yeti cups full of Starbucks goodies and gift certificates. A huge hit.Green egg, dead animal and alcohol. The "Boro".. TN

I'm very fortunate... After getting rid of a few bad apples; I've got a good team. 3 of the guys I originally hired are all in higher levels as we close out the year, that's what gives me the greatest satisfaction in my job... I always tell my boss that I'm working towards having my entire team being ready to replace me LOL...
Here's some pics. I had just sharpened my knife about 15min before I cut myself)
The butts are humming along at about 280° dome and the deck smells awesome. Currently sippin some Sailor Jerry's and smoking my favorite stick.
Girls are off for 2 weeks and I will be burning some excess PTO time along with them. Life is good and I am very grateful. That's about 23lbs of butts...MSV Chill Spot

Did you set the bottom grid right on the pan, then butts, then top grid on the butts directly? Do the lower butts get the juice squeezed out of them? I can't tell if the top grid is supported by bolts or something.

hapster, looks great!I just did 3 butts last weekend, 10.15#, 8.25# & 7#. 25.4# total. I put the smallest above the 2 others on a raised grid. It was done about 3 hours before the others. FTCed it while the others finished. All were pulled at 205 internal.Whats your expectation & plan?The only discard I had was 3 bones & a little bit of fat cap from the big boy.All internal connecting tissue was dissolved. Pulled them of this morning around 8:30 after about 15hrs on the egg. The it was around 198° on average thru the 3 of them and they were nice and jiggly...
Pulled great and now sauced and away. Going to heat it for Monday lunch over night Sunday slowly in crock pots on low/warm...
