Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

I do mine at 400°, raised direct, but spatchcocked. Don't even own a rack that'll fit a game hen.The only time I do them whole, I put them on the rotisserie in my toaster oven. Does a nice job. No smoke though. Which is often just fine with me.
I hate it when I go to the kitchen for food and all I find are ingredients!

@CarolinaQ @piney thanks, I definitely will try them spatched at some point I have them drying on SS stand-up racks, breast down, and I was thinking direct, because I have done chickens that way in the past. Will these little fellas hold up to raised direct okay without burning?

Brother I run whole Cornish hens anywhere from 325-425 degrees and it turns out the very same. I do cook indirect though.

@SGH, thanks for chiming in, I started them raised indirect, now I am finishing them direct to crisp up the skin. Deep fried sounds great too, most things deep fried are good!

@anton ... please allow me to piggyback for a minute ... I have two Cornish Game hens in the frig, so your question was timely, but I want to spatchcock them.
It looks like folks cook spatchcocked hens like they do chickens (except for Mickey w/ the bacon strips.) I cook spatchcocked chicken raised direct; at about 375 degrees; and don't flip. Anybody see any problems with that? Might do one bare and one with bacon.

@Jeepster47, I personally spatchcocked chickens the way you just described, more about 375-400 raised direct with outstanding results.

Done, crispy skin, great flavor, used kickin chicken rub made by Weber, started raised indirect, removed indirect stone and drip pan at 110F, then took them to 160-165 breast temp.
Mashed garlic potatoes with leftover gravy I sealed up from T-day turkey, thin gravy from the amazingribs.com ultimate smoked turkey recipe, it is still outstanding.
