Steak Knives

Thinking of asking for a set of good quality steak knives. Any advice? I certainly like the Shun but can't justify the price. I was looking at some Victorinox but haven't held them. I think I like the idea of straight edge so as to be able to sharpen myself.

    I have cutco and love them. At the end of the day knives are very subjective and depend on your taste. Wood handle, design etc. with cutco I have a lifetime guarantee that if it breaks I can send it back for another one. I don't think Amazon offers that.

    SWMBO bought into the CutCo Kool-Aid-initially with a quite good quality set of steak knives (I will endorse that buy) and then several years later when a family friend's daughter took up the challenge.  Would not have bought  speciality or utility knives from the them but now own a few.  I'm sure there are steak knife sets on both sides of the equation so find those that feel great, hold an edge and meet any other discriminators you feel are important.  That steak will always be there!  FWIW-

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Just like anything, depends on the $$$$ you want to spend. Believe it or not Kershaw has a kitchen series that is fairly priced. I have a 12" Kershaw "Breaking Knife", it works great. Not much to look at but its very easy to keep sharp and at $30.00 I love it.

    My wife and I just got this set at a store in Cary, NC as a Black Friday sale for $50. They are absolutely fantastic.

    Won't help the OP, but two weeks ago my BIL called and told me he found a set of four, like-new JA Henckels steak knives at a yard sale, and he remembered I had Henckels knives.  For $1.25 each, he bought them and would I like them?  With postage, I paid him $10.70, 
    Do they have wood handles, or fit my hand perfectly?  Who cares!

    I have serrated Victorinox and like them very much.  I also have a sharpener for sharpening serrated blades.  Cutting on a plate is very hard on the knife edge making the knife dull quickly.
    Serrated knives, only the tip of the points gets dull and the majority of the knife edge remains sharp.  Cutting meat for your mouth, the saw blade type action works very well and you aren't concerned with the look of the edge of the meat before it goes in your mouth.

    To each his own, but I think for steak knives, serrated is better.

    More important than what you buy, keep them sharp.  Steak knives get ignored more than chef knives.

    I'm a huge fan of Victorinox knives. I have several of their breaking, boning, butchering, slicing and shoulder & joint knives. But have never tried the steak knives for some reason.

    Another fan of the Cutco Steak Knives. Expensive, but worth it IMHO.

    Will always remember my introduction to Cutco. Was a starving College student. Even then, though, I was know as the BBQ/Grilling guy. My friend asked me to cook a steak for one of his friends. It was on a Hibachi. Crappy looking little steak - figured it was going to be tough as nails. I was asked to cut it in half to serve, and was handed an ancient looking Cutco steak knife. It cut through the steak like butter. Figured I was wrong about the steak. I was offered a bite. Nope - it was like shoe leather.

    I then asked about the knife. I was told she inherited it from her Grandmother. Started looking into Cutco at that point.

    Oh don't get me wrong - I'm not knocking Cutco. We bought an 8 piece knife set from a neighbor college boy for $300, but the extra $140 for 6 steak knives was just too rich for me at the time. Sad thing was the following year the kid stuck a shotgun in his mouth and ended his need for more sales!

  • Yea I bought a set of 4 Westorff (excuse the spelling) German knives. I have several other of there knives and they are very good and hold an edge. But it's very true about the plates destroying an edge. I have to sharpen every few diners to keep them razor sharp. My Chef knife I sharpen a few times a year if that often (I do run a steel over them every few uses). Same steel and just as expensive.

    I would say serrated is the way to go. I still have a set of 4 insanely cheap from a catalog from 30 years ago. Serrated and still in use and just as sharp. Flimsy and light weight but they work.

    I would buy anything NOT from China, and has a good size handle and weight that is serrated.

    I have a set of Sheffield made Louis Rose "thru tang" natural stag steak knives that I don't use.   Got them 40 years ago as a wedding present. Not married now so no issue there.  I don't do ebay but if a forum member can use them I will make the price right. Please contact me. x570-954-x2696x Chris

  • We still use steak knives given to me as a Christmas Gift by my employer back in another life.  If I'm cooking cheap meat, I sharpen them really good using my Spyderco knife sharpening set.  But if I lucked into some affordable but really good meat, I just hit them on the steel a few times.  And if it's Costco Choice or Prime, we only use the knives to butter our bread.

    I'm not totally free from religion, I just have decided to practice my own religion.  I believe in Nature and Science and have my own philosophy on "Life Force".

    I do believe in Santa Claus, I can hear the bell ring.  the Easter Bunny still brings me candy.
    But I'm sorry to say, I must lack "Sincerity", as the Great Pumpkin has never visited me either.

    I bought a set of knives (cheap set) and they were great. I think they cost $29.95 for the whole set. I have since gotten a better knife set but just love those steak knifes.
