Brisket número deuce

Got up this morning and dug all of the rocks out of my bag of Ozark Oak and threw a 14lb (pre-trim weight) select grade brisket on the large BGE. Mixed white oak chunks throughout the lump and got it settled in just below 300 dome. At 7 hours in it hit 195 and probed like butter in the point and the flat. FTC while I smoke some Mac-n-cheese and put together a salad. Pics please.......

    The point was great! The flat was a little dry but still very edible. The flat leftovers will be used for chili. Has anyone tried @EggObsessed‌ chili in a crockpot? I know it's blaphsemy but I would like to put it together and cook it at work for the guys.

    I highly recommend them. Beef ribs are one of my very favorites.

  • @shtgunal3:  I've done the brisket chili every which way.  I would just get it to the final I would get all your sauteing done and everything blended in a stock pot before putting in a crockpot to get all tender.  Good luck with it!  Hope you like it!

    7 hrs at 300f ? I like that time frame, I may try a little higher temp on my next one. Last one was 225-245 for 20 hrs for a choice 12 lb.

    @shtgunal3 - looks fantastic! Wish I would have had some smoked mac n cheese with mine a couple of days ago. I have always been a 225 guy but 275 served me very well on my last one. I think that may be my new temp for brisket. Less time definitely kept the moisture in for me. Nice job.

    I'm doing my 2nd SRF brisket in exactly 1 1/2 weeks. I'm already grinning like a little kid on Christmas morning in anticipation.

    I live just down the road from SRF and I still haven't been able to spring for one of those. I think it's like a dry aged ribeye (that I've never tried) and I just shouldn't do it because everything else will disappoint after that. Good luck with the SRF slabs boys. So jealous....

    A co-worker sprung for the SRF briskets. He bought one for him and one for me. All i have to do is cook them.

    @shtgunal3-most eggcellent cook right there.  Since SRF briskets have weaved their way into the thread-you need to jump on those asap.  Of course, as noted above, once you head down that road you will be hooked. Did an SRF last Sunday to off-set the turkey cook.  Had been several months since the last one.  Whole 'nother eggsperience!  Although a good prime brisket will keep your brisket cravings at bay in the interval.  Just an opinion...
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
