Another hit on a simple cook. Had chicken breast left over so thought we'd use them. Cast iron skillet, sautéed onion and portobello shrooms. Heated the chopped chicken after tossed with Roasted Red Pepper dressing. Griddle indirect at 450, brush butter on the griddle, slide the ques off the pizza peel, cook till you hit that nice color and crispness. Smother top with butter and flip. Hell, I'd eat the tortillas by themselves.

Direct on a raised grid. Don't know if raising is necessary. ..direct at 450 with butter seemed to be perfect. Oh boy! That looks magnificent @henapple! I need to use my cast iron more often. Made a cornbread the other night to go with my brisket. Awesome! I will definitely be trying this. I have done tortilla pizzas and I love the flavor of the 'tilla off the egg.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Definite try coming... on the mini!. Neighbor just dropped a butt off. Wondering what to do with hunk of meat.
