The holidays are fast approaching my friends. That said, I'm getting ready. This is my favorite time of the year. From now until New Years is when I really like to kick back and just cook. Starting tonight, the units are coming up to temp and online. Going to let Unit #1 idle at 225 degrees all night. Got 50 pounds of turkey and 40 pounds of ham going in it about mid day tomorrow. Once these small items are cooked and out of the way, the real cooking will begin. Unit #1 will run constant from now until New Years. I want to wish all of you a safe and Happy Thanksgiving my friends. Hope that yall are healthy and happy. Here is Unit #1 coming to life and breathing very heavy oak and pecan smoke.

Gave her a good burn out at 350 degrees. Fixing to drop her to 225 degrees and let her idle the rest of the night. Unit #6 will be coming online shortly.

For a very selfish reason, I'm glad you're staying stateside ... you've contributed greatly to the cooks I've done so far ... I'd miss your presence.
Like FarmerTom's comment, geez I'm working on a two pound piece of pork and you're going to do a small cook with 90 pounds of meat!!! Wow. And, you talk about unit #1 and unit #6 ... are you doing that to mess with folks, or are there four other units?

That's a lot of meat to cook. I am just doing one turkey and a pecan pie. Start my brining process tomorrow. Happy Thanksgiving to you @SGH and all on the forum. Have a safe and fun holiday. This is also my favorite time of the year and am getting my mind around getting my other hip replaced a week from Wednesday. I'm not as nervous this time.
