Mad Max - Champagne substitution?

I'm going to try the Mad Max method for my turkey and he uses a bottle of white wine in the recipe.  Would there be any positive/negative/neutral effects if I used champagne instead of white wine?  

My wife always says that her favorite Thanksgiving turkey had champagne used in it like much like the Mad Max recipe so I'd like to try using champagne if there aren't any real negative reasons why it can't be substituted.

  • The wine supplies a different taste than juice or water, and much depends on the type of wine. Have done a MadMAx with Chardonnay and with a Moselle - no real difference with the bird, the gravy using the chardonnay had a bit more body, IMO. I don't think using champagne would matter much, the bubbles and alcohol will all be gone by the time the cook is over. Champagne can vary in sweetness, I'd use what you like. 

    As an aside, I've used a cheap Brut in beer batter fish when I did not want to waste the beer and it came out great!

    ive used merlot and other than the gravey turned purple it tasted fine
