Smoked a small (3.5lb) flat this past weekend. Wife thought it was good, but to me it was dry. Turned into a great brisket chili though!
S&P rub with hickory for smoke. On the egg at 250 degrees.
Foiled at 160
Roasted red potatoes seasoned with EVOO, garlic salt, red pepper flakes and butter. Wrapped in foil on the mini at 400 degrees for about 1 hour.
Brothers doing work.
Excellent bark and flavor, nice smoke ring. A little dry.
Plated with the potatoes.

Beans in the chili???

Brother Fence it looks like a winner to me. How do you like that cyber q? I ask because I'm actually toying with the idea of getting a controller myself. Your thoughts my friend?

Thanks you kind sir. I love the cyberq. That being said...I know you are a many of many pits. The cyberq will only control 1 pit at a time. I believe the stoker and maybe others offer multiple pit controls. But to me the cyberq works great. I use it along with the pit pal app and can control the temp from my phone. I love being able to set it and forget it. There are pros and cons to each of the pit controllers. I have nothing bad to say about the cyberq. All depends on which glove fits the best.SGH said:Brother Fence it looks like a winner to me. How do you like that cyber q? @fence0407- The fact that it controls only one pit is fine. I'm only considering a controller for my insulated vertical cabinet, not my eggs or offsets. If it's not being to nosy, how much did it cost my friend?

@SGH I gotchya. With one pit it works just fine. I want to say I paid around $375 from Firecraft.com. It was an anniversary gift from my beautiful bride. All of my experiences with firecraft have been top notch. At the time, they had the best deal on the cyberq.Large - Mini - Blackstone 17", 28", 36"

that looks good Fence it is hard to keep a small flat juicy as there is not much fat to work with. It is the Chili time of year though._________________________________________________Don't let the truth get in the way of a good story!Large BGE 2006, Mini Max 2014, 36" Blackstone, Anova Sous Vide

Hey, here in GA as soon as it drops below 70, it's "chili weather"

You got that right. Still haven't done a full packer, but want to. First time making brisket chili and wow. Now I know what to do with a small flat.JRWhitee said:that looks good Fence it is hard to keep a small flat juicy as there is not much fat to work with. It is the Chili time of year though.

Nice job on the flat! If it doesn't get eaten in slices or chili, try taco's or in a burrito. Good stuff.

Nice looking cook. The brisket still looks good. Almost looks like a pork loin with nice crust.------------------------------
