Some simple wings.

Nothing special tonight. Just some wings with a little salt, pepper, cayenne and a little more cayenne for good measure. Kind of pressed for time so I'm going raised direct at 450 degrees instead of my usual indirect method. This is remaining Rockwood lump and pecan wood splits from the oyster cook. Hope they turn out.

    Did not think simple was in your vocabulary (not withstanding what @henapple says about you) =))
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    I can't delete them since I downloaded the the new iOS download. I try, but it will not allow me to. Eggcelsior said he saw where they were working on a fix for it.

    How often do you flip them when cooking raised direct that hot? I'll bet you can get those to the finish line fairly quickly like that...

    About every 3 minutes. But they are done in about 24 minutes and 17 seconds. Give or take a little.

    As long as you keep turning them, they turn out pretty dog gone good. However, they are very easy to scorch at these temps.

    Thank you all for the very kind words my friends. Just remember if you run your temps this high, you MUST flip constantly or scorching will be the result. Thin skin comes out very crisp using this method.
