Brisket...I think

I think this is brisket. Not sure, I've never seen one with marbling like this...










So I figured I should probably put a good rub on it.

In anticipation of potential failure scenarios, I have 3 probes in the brisket, one on the grid, and the PartyQ is holding temp at 250* grid. Call me anal, but I design redundancy into systems whenever possible. 


Ok, I'm going to try to get some sleep now, hope everything looks just like this when I wake up.

@DMW-I am waiting for your assessment of the goodness that awaits. Starting with that hunk of beef even I would have a hard time hosing it up. Great eats await!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Yep! It will be great. Honestly, cooking a Snake River Farms brisket is like cooking a pork butt. There is so much fat, you have to really suck to screw one up. I used to not recommend one for a rook (not calling you a rook but you know that lol), but if you can afford, by all means.DMW said:I can't remember the last time I've been this excited.

SRF Brisket is AMAZING. If you can get hold of one I highly recommend it. It will not disappoint.
