Welcome home mom and dad

My 70 yr old folks returned yesterday from a 2 week trip they never thought they'd take to New England. You see, my dad is recovering from brain tumors discovered 2 years ago. His 3rd bout with cancer, but he has defied all the odds. So tonight to celebrate and to hear about their trip I'm cooking a New York Strip loin roast with some baked sweet potatoes. My own little idea of fresh garlic, olive oil, Worcester sauce and some basic spices make up the slurry on top. My dad is a true meat and potatoes guy. I hope he'll enjoy this meal. God love him, he's a tough dude and has taught me a lot about life these last several years . Finish pics later. Thanks for looking...hope yall have a great weekend.

Thanks for the comments yall, really appreciate it. Funny thing is I'm a rare meat guy. Dad is a well done guy. So this roast was overcooked for my taste. I took it off at 140. Only the very center had any red to it. But mom and dad loved it and the few hours together are more important than the roast. I will not post any pics of it cut...I might get booted off the forum for violating such a beautiful roast. It tasted good though.Fish, Hunt, Cook....anything else?

Thank you all for the comments. Dad is a tough old bird, he isn't really supposed to be here if you believe all the doctors. So I do appreciate the time with them. He called today to rave about the "perfectly done" roast. To each his own I guess. My next strip roast will come off at a cool 120.Fish, Hunt, Cook....anything else?
