Pear Wood?

My BF just finished a week of chopping wood (he is a contractor and the latest job basically paid him to cut and then haul his own firewood.) Mostly it is oak, which I know people love, but I think may be a bit too smokey for me. He has a truck bed full of pear tree...and I've heard fruit woods are more subtle. Thoughts?

Sister, pear wood is a semi sweet and very subtle wood. It's very close to Apple in the smoke taste that it imparts. Only a very trained tongue or a very astute bbq guru could pick out the difference between meat smoked with Apple or pear wood. They are that close in flavor profile. A word of caution. As when using Apple, pear can also over darken poultry if you are not careful. This is usually not a problem on the egg but is a real concern on true wood fired units. But worthy of mention nonetheless. Scoop up that pear wood and enjoy sister.

@PNWFoodie, Fruit woods are awesome for smoking. Especially foods that take on smoke easy and you don't want overpowering smoke. I mostly use cherry and apple. Also, in your part of the country you should have a nice supply of alder on hand. Alder is very mild as well.Steven

Once again, my never let me down smoke wood reference chart - Pear is similar to apple - not quite as strong.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
