I pulled out two fist sized chunks of apple. Haven't thrown em in yet. I have chips I could use instead if you guys chunks would be overdoing it....

Since I never used BGE lump, I can't comment on how much smoke flavor it produces alone, hopefully a more experienced egger will chime in, however I don't think you will go too wrong with or without minimal smoking chunks. Have fun.

I always use chips when I do poultry. Chunks or logs are too much. Poultry only takes an hour or so and handful or two is plenty. I like to use apple, cherry, peach or pecan woods.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

Yeah, that is my Raptor... Or it used to be a Raptor lol. I've done a tremendous amount of work modifying it. I actually am one of the Admins of the biggest Ford Raptor forum on the web, but unfortunately I'm not as active on it these days as I used to be, too busy with work and a new family. Man I'm mid-way through the cook, egg is staying dead on 350 grill temp, there is a butter, basil, garlic, and rosemary concoction I made melting away on the two spatchcocked yardbirds. I'd previously sprinkled s&p and Dan Pastorini's garlic and herb rub on them.
A big pan sits underneath with red potatoes, onions, squash, zucchini, Brussels sprouts, baby carrots, celery and radishes, catching all the chicken juice. Good lord, the aromas I'm smelling right now are out of this world. I wish I could attach a smell link to this post!!!

So I started skin-down and just flipped them at 130 internal temp. They're skin up now and definitely not as skin-crispy as I'd like.
Should I heat up some cast iron griddle presses in a pool of EVOO on my flat top, and then hot-press the birds?
