Its very easy...butterfly a chicken thigh or breast open, pound it flat. Stuff with halved jalapenos, cream cheese, shredded cheese. Fold chicken back together, wrap in bacon. WA-La! Chicken bomb!!! The cook I did was 400 degrees indirect for about 45-60 minutes. I sauce the last 15 minutes of the cook. They're a home-run every time!
Can also be done direct at 375-400, but I must say, I liked the final product better last night with indirect heat. I always add a little DP of some kind to mine as well.
