Sunday Football Food Lineup

Found a small single rack of baby backs that will be going on first with Swamp Venom, using hickory and oak for smoke... Then going to do some chicken tenders I have marinading in some Santa Fe marinade from Wegmans. Also going to do a few of those little naan bread pizzas with varied toppings, along with a few links of Hillshire kielbasi...
Heat and humidity have broken, finally... AC is off, windows wide open to catch the breezes. In the 70's and beautiful...
Hope everyone has a great Sunday... Rooting for the Eagles, and since I have them this week in the suicide pool, the Jets and Falcons as well

Simple spatchcock chicken today - weather is fantastic and too much on the tube, Choice of PGA Golf, two Canadian Football games, six NFL games and three MLB games - no time to cook so the easy on easy off one chicken will do. SWMBO will make some salad as a side.Houston at Oakland starts at 1:00PM on SportsNet, the wheels are starting to wobble but Go A's.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

Ended up breaking the egg down and completely cleaned it out... I see the crack in my firebox now goes all the way around, no worries, the new warranty one has been in my garage for over a year now.
Doing the ribs turbo fashion at 375-400 dome... Chicken is marinating

Turbo rib question
Been "smoking" them now for about 4 hours at around 400... There is no bend in the bend test, at all. In fact they may be stiffer now than before. Is this normal with a turbo high heat cook?

@hapster I may be replicating your cook. I've never done turbo ribs. I threw a few racks on and didn't watch the temp because I was distracted by Da Bears. It was smoking around 400. Ribs got up to 190 pretty quick. Failed bend test and meat isn't retracting from the bone. I dropped the temp to 300 and basted with dilute sauce. After re reading you post I just noticed your cook "time". I'm certainly no pro but let me offer this if I may. I have been playing around with turbo a good bit as of late. Trying different temps as well as set ups and techniques. Here are my findings. For temp 350-375 seems to be near perfect for ribs. I have ran as high as 425 with good results but I had to take several steps to attain good results. Spritzing, turning and shielding to prevent scorching. As to the bend test I have found when running turbo to start checking them around the 1 hour and 15 minute mark if running 350 degrees. If running 400 degrees start checking at the 55 minute mark. If running in excess of 400 degrees I start checking at the 45 minute mark. Then check every 15 minutes after the first test no matter which temp that you are running. That way you will not over shoot your window. Again this is just my way of doing turbo. I'm sure others can offer more. But the above has always yielded excellent results for me.
