I am thinning some smaller trees on my land and have lots of hickory, red and white oak, and silver maple. I am cutting now into fist sized chunks. Question...given the small sizes (read: lots of surface area) how long would you let it dry before using it for smoke? I typically toss a few chunks on top of my lump in the Egg. Thanks
Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

You can use it now, but I would let it dry for 6 months or so.
Not to get technical, but according to chemistry alcohol is a solution...

You can use it green/wet but I like to let it dry for 4-6 weeks.

Once split and kept out of the weather in an area where air can circulate, you are good to go with the sapwood in as little as a month. The heartwood is probably ready anytime you want to use it.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

Stack it off the ground for air circulation and let it dry or "season" for 6 months per inch if thickness.
