Can't wait to visit Albuquerque in a few months and bring back some green chiles! The green chiles I'm growing now aren't very hot, unfortunately. But they have excellent flavor and smell wonderful in the egg roasting!

How do you store and keep these chilies?

After they've been roasted, you can freeze them for at least a year, if not longer.

Best to clean them first? (remove skins and seeds) Then tightly pack them in a jar/baggie?

Negative - you'll want to keep the roasted skins attached and the peppers as-is. The skin will help protect against freezer burn. Throw them into freezer bags and store. When you are ready to eat them, thaw them out and then peel the skin. If you want heat, leave the seeds in!

Absolutely do NOT clean the skin first, Roast them for about 7-8 min moving constantly. bag them and freeze them. Take a bag out of the freezer. toss in micro for 3-4 min let cool till you can handle , peel and use in whatever your making

The hot ones i got are hot even without the seeds but i usually keep a few in

If your somewhere where you can buy them and they will roast for you do it that way saves a ton of time and headache

after they roast them leave in bag for about an hour so the keep cooking , spread out on table and bag them up

I have a ton of Anaheims this year and just picked 15 from two plants yesterday. I know they aren't Hatch but close as I can come in the Midwest. Curious if anyone has a great green chili sauce recipe like you get in the Southwest?

I don't like adding much to my green chile. A little salt maybe some garlic it just taste so good by itself. Chop it up, warm in a skillet with above and toss on a burger or whatever if your making some sort of enchilada spoon over top or add to inside of enchilada or burrito My fav restaraunt for chile here in ABQ adds ground beef onion and garlic

As someone who's stored many, many bushels of Hatch in my freezers over the years, I've tried freezing them both ways, peeled first or left with the skins on, and peeled after thawing/before use (I prefer to freeze 5 to 6 chiles per small freezer bag, it's a good amount for my type of cooking).
Peeling an entire bushel in one afternoon is, uh, "an event", and my fingers are split and burning for a couple days afterwards (and DAMMIT be careful how you take a leak during that time!!!).  However, recently I freeze them with the skins on; peeling them after thawing is a minor annoyance but no big deal, only takes a few minutes for 5 or 6 of them.  I can't say I've noticed a difference in flavor/texture between the two, but I've not done a controlled side-by-side comparison either.
    FWIW.

some of the family peels them before freezing and it seems to me that the chile loses some flavor and heat when peeled first so that why i always suggest leaving the skins on

Roasted first batch of Hatches yesterday evening - will descend on WF again today for more.  There is no choice at WF on heat level; they are HOT!!  I feel there is some chile verde in my future.

Whole Foods here in Tulsa has the Hatch chiles this week for .69 a pound. They'll even roast them for you if you want to wait. I bought some today and plan on picking up a few more pounds of roasted chiles this weekend.

Any road will take you there if you don't know where you're going.
